One skillet brunch


Ingredients:


Olive oil
1 cup diced aubergine
1/2 cup of mixed beans
1 onion chopped
1/2 cup tomato bolognese sauce
1/2 cup cheddar cheese
2 eggs
1 teaspoon of thyme or any choice of herbs
Pinch of salt 
Pinch of black pepper
2 baby potatoes diced

Instructions:


1. Heat a skillet and add olive oil. Once hot enough, throw in the onions and fry until translucent.

2. Now add the aubergine and potatoes. Cook covered in medium heat for 15-20 minutes, until the potatoes are tender.

3. Next, add the bolognese sauce and beans, sprinkle thyme, salt and pepper into the dish and cook for 10 minutes more.

4. Lastly, crack two eggs on to the dish and layer with cheddar cheese. Cover and let it cook in medium-low heat for 10 more minutes.

And you are all done! Now serve up it warm and relish 😊🍴
