Soup of the day: Roasted Mediterranean

This is for those with the palette for the warm Mediterranean feel. You can use any vegetable you like, experiment with the flavours, and add or remove ingredients to your own liking.


1. 2 courgettes
2. 1 tomato
3. 1 cup mushrooms
4. 1 red pepper
5. 1 red onion
6. 1/2 cup fresh cream
7. 1 teaspoon mixed herbs
8. Salt to taste
9. 1/2 cup chorizo, cubbed (optional)
10. 1 teaspoon black pepper
11. 1 cup water


Frist of all, slice up all the vegetables, lay them out on an oven-proof tray, and roast or grill them for 15 minutes. Then put them in a blender with 1/2 a cup of water and make a paste. 

In a saucepan, add the paste, 1/2 a cup of water, herbs, salt, chorizos and black pepper and simmer in low to medium flame for 8-10 minutes. Leave out the chorizo if you want vegetarian. Then add the cream and simmer for 3 more minutes before taking it off the stove.

Serve hot and enjoy!
