Prep time: 40 minutes tops

Here is my own easy recipe for fish pie. There are very many recipes that you can find online, BBC one being one of the easiest. Well, mine is quite easy too that takes about 40 minutes to prepare including baking time, 30 if you use a ready made white sauce.
Ingredients:
1. 400g Salmon
2. 1 Medium courgette sliced
3. 8 Medium button mushrooms sliced
4. 4 Spring onions chopped
5. 50g cheese grated
6. 1 teaspoon Olive oil
7. Pinch of salt and pepper
Procedure:
1. Prepare the white sauce
25g Butter
25g Flour
400ml Milk
In a sauce pan heat butter and flour till butter melts, stirring constantly for 1-2 minutes. Then add in the milk and bring to boil till it thickens. Also add in some pepper and salt to taste. Once done set aside to cool. Should take not more than 10 minutes.
Alternatively, you can use lasagne sauce to add into the fish and vegetables to bake as the sauce. Both go very well…
2. Make the pie
First of all poach the salmon in salted boiling water for about 10-12 minutes till flaky.
Meanwhile fry the spring onions, mushrooms and courgettes in a dash of olive oil. Add a pinch of salt to taste.
Once done, throw them all together in a baking dish and layer with white sauce. Cover with grated cheese and bake for 15-20 minutes at 200 degree C till all cheese melts and there are bubbles. For cheese, plain cheese is best since cheddar, I find, gives a tangy flavour. But if you like that, you are welcome to put that instead.
ALL DONE!
Serve with toasts or bun and some quality wine.
