Easter nest cupcakes

Another easter special:

Easter egg nests! It is small and cute and my man loved it :) So here is a lovely recipe for my own little easter nests with eggs :)

For this I used:
  • Cadbury mini eggs
  • Chocolate icing tubes
  • Muffins

So, to start with the muffins,

Here is a BBC recipe for simple muffins that I follow, it makes 12:

1.) 300g self-raising flour, sifted
2.) 1 tsp baking powder
3.) Pinch of salt
4.) 150g light brown sugar
5.) 250ml whole milk
6.) 2 free-range eggs, beaten
7.) 100g butter, melted

  • Now prepare the muffin batter. In a large bowl, sift together the flour, baking powder, salt and then stir in the sugar. In a separate bowl, whisk together the milk, eggs and melted butter, then pour into the dry ingredients and quickly mix together.
  • Preheat the oven to 180C/350F/Gas 4 and line a muffin tray with paper muffin cases.
  • Divide the batter between the 12 muffin cases.
  • Bake for 20-25 minutes, or until a skewer inserted into the middle of the muffins comes out clean. Leave to cool for five minutes in the tin before serving warm or at room temperature.

Once the muffins were done now you can core a bit from the top of the muffin.

Now use the chocolate icing pastes in swirly circular fashion around the surface of the muffin.

Top it with three mini eggs

And VOILA!!!

Now enjoy!!!

Happy easteR

Love always,
JB
